Lisa Goodwin-Allen is the award-winning chef of one of Britain's premier culinary enterprises, Northcote in Lancashire, where she has served from the age of 20.

You are among the few female cooks to attain prominence in a predominantly male industry. Is that a provocation? Do you harbor resentment against inquiries centered on gender?
Any job presents challenges across all sectors when one strives for excellence at our operational level. For me, the focus is not on your identity or status, but rather on your aspirations and objectives. I welcome inquiries regarding gender, as I believe it is crucial to persist in discussions about gender equality in the hospitality sector, and I take pride in being a woman in this field.
Your victorious dish on the Great British Menu was appreciated by Prince Charles; how did that affect your emotions?
It was absurd! I did not anticipate completing three courses; my primary objective was only to finish one course. It was a profound honor to participate in an exemplary program that supported a commendable cause, and it was the least I could do to contribute to individuals who exceeded expectations during the pandemic. This was my inaugural participation in the Great British Menu, competing against some of the finest chefs, therefore I did not anticipate achieving such success. I was elated; delivering it to royalty was a significant honor and an unforgettable event.
In what ways does the Ribble Valley influence your culinary creations?
The region influences my culinary creations, drawing from the heritage of Lancashire and its traditional recipes, which serve as significant inspiration. The Ribble Valley possesses a plethora of ingredients that continue to inspire the classic flavors included in all of my meals today.

Mentor, adjudicator, chairperson, culinary expert… Which role do you find most enjoyable and why?
I believe that all the aforementioned positions are interconnected for me. I profoundly enjoy being a chef. It is the environment in which I can express my creativity and feel most authentic. Additionally, I am passionate about mentoring, sharing knowledge, and educating to assist the forthcoming generation of exceptional cooks. Devoting time, energy, and education to emerging chefs is paramount to me, which is why I take great pride in the various roles I fulfill.
What is the significance of seasonal cooking to you?
Flavor is paramount for me; that is the primary reason we utilize seasonal ingredients at Northcote. When an ingredient is in season, it exhibits its optimal flavor. We are fortunate in the North West to possess exceptional ingredients that inspire the menu. The Great British Isles have a plethora of products and ingredients that we cherish utilizing.
What is your paramount aspiration?
I have remained at Northcote for an extended period, and my ability to remain at one location is attributed to my continuous evolution, learning, and personal growth over my tenure. I possess a strong enthusiasm and motivation, which contributes to maintaining innovation and novelty in the culinary setting. While the future remains uncertain, I am committed to continual evolution to maintain my position at the pinnacle of my field.
What counsel would you offer to young, aspiring chefs entering the hospitality sector?
My primary recommendation is to absorb knowledge eagerly. Acquire extensive knowledge and engage in diverse experiences during your youth. If you possess enthusiasm and a desire for knowledge, you will achieve significant success in the hospitality sector. It is a privilege to inspire the forthcoming generation in this field, and if they exhibit a willingness to learn, they can be taught anything.
You will be the very first celebrity female chef to participate in the culinary lineup at Allianz Stadium in Twickenham, alongside chefs Tom Kerridge and Tommy Banks. Could you provide additional information regarding that matter?
I am extremely enthusiastic and privileged to join Tommy Banks and Tom Kerridge, two exceptional chefs in the program. The stadium is a great location, and I eagerly anticipate cooking there, hoping for many more opportunities in the future.
