Pomegranate + Lox Toast

These toasts can be prepared in advance! They do not require warmth, ensuring they are ready when your friends enter.

Ingredients


  • 8 slices rye bread

  • 4 soft boiled eggs

  • Olive oil

  • 8 tablespoon cream cheese

  • 1/2 red onion

  • 4 radishes

  • 1 Persian cucumber

  • 4 ounce smoked salmon

  • 4 sprigs dill

  • 1/4 cup pomegranate seed


Instructions


Step 1

Preheat the oven to 375°F.


Step 2

Position the pieces of rye bread on a baking pan. Lightly drizzle the bread with olive oil and toast in the oven for approximately 10 minutes.


Step 3

While the toasts are baking, finely slice the onion, radish, and cucumber.


Step 4

Extract the baking sheet from the oven and apply 1 spoonful of cream cheese to each slice.


Step 5

Distribute the salmon evenly on the toasts, followed by the onion, radish, and cucumber.


Step 6

Halve the soft-boiled eggs and place one half atop each slice of toast.


Step 7

Finally, garnish each toast with pomegranate seeds and little sprigs of dill.
