Iris is distinct from the majority of restaurants globally. Situated in the Norwegian town of Rosendal, access to the diner, resembling a futuristic spacecraft, is exclusively via ferry. The experience, termed “Expedition Dining,” commences at Chef Anika Madsen’s boathouse on Snilstveitø Island for appetizers, followed by a visit to the Salmon Eye art installation in the fjord, a cultural hub focused on promoting sustainable seafood practices.
Upon arrival at Iris, visitors are initially presented with a movie highlighting the challenges facing the global food system, followed by an escort to the underwater dining experience. Although there is no fixed menu, each item in the 18-course meal narrates a distinct story. “A narrative concerning the challenges and threats to the global food system,” remarked Iris, “yet also encompassing ideas and proposals for future innovations that may facilitate their resolution.”
The 2022 comedy-horror film, The Menu, readily evokes thoughts of an unconventional and highly exclusive dining experience akin to Iris. Norwegian opera soprano Mari Eriksmoen stated that, despite visiting numerous Michelin-starred restaurants over the years, she had never encountered anything comparable to this, deeming it the "most extraordinary restaurant experience" of her life to date.
